I like trying new healthy recipes, so I incorporated "Make a Healthy Recipe" with "try 2 new fruits or vegetables" and sauteed chicken sausage with vegetables like carrots, snow peas, onions and celery and added two new vegetables - chayote (like zucchini, only it stays firm) and butternut squash. I just added some chicken broth and seasonings. It turned out delicious! My husband loved it too! I really had a difficult time finding two vegetables that I had not tasted before and could not find a fruit that I had not previously tried.

Cindy, try the oriental isle in the grocery stores for different kinds of canned fruit. It's not as great as fresh, of course. Lychee comes to mind. Those are fun and different. Truly, fresh ones from the tree are the best. Also, we were wondering how many people have eaten cactus (cacti?) leaves. You can find them in the stores...or out in the hills, I suppose. Let me know how it goes.

Hi Linda, The reason it was so difficult for me is because I grew up in Hawaii, so I've eaten lychee, mangos, starfruit, papaya, guava, lilikoi, jicama, and I have even eaten cactus (Nopales)which is delicious. I love trying new foods, so I'll keep looking.

I too found it a bit of a challenge to find a vegetable that I had not eaten before. However, one day while shopping at the grocery store, I noticed some “purple potatoes” displayed. They were a bit pricey (over $3.00 a pound), but I thought it would be fun to buy a few and try them. I really didn’t know what to expect when I cut into the purplish black skin; however, I soon discovered the potatoes were a vivid purple all the way through! Since they didn’t taste a lot different from the brown or red skinned potatoes I usually eat, it seemed a bit strange to be eating something that tasted familiar but was so colorful rather than white.

I learned that I love bok choy. You can stir fry it but I also like to eat is as is.
