For a healthy breakfast on weeday mornings, I make a baked omelette on Sunday night for the week using egg beaters, milk, cheddar cheese, vegetables, turkey sausage and seasonings. I just have to cut a piece in the morning and warm it in the microwave and I have a fast and nutritious breakfast.

You can also make an omelette in the crock pot using all the ingredients Cindy mentions. My family also likes to throw in some hash browns. Let it cook all night, then in the morning you and your kids can have a warm healthy breakfast and bonus your house smells yummy.
